Salis Terrae

The area in which our vineyards grow is the hilly area near Slovenia in the Friuli Colli Orientali Doc. The hills are soft. Dotted with small towns and villages. The soil is made up of marl and clay and produces excellent quality grapes and relatively low yields per hectare.
The climate is mild and often windy. Splendid springs precede hot and sunny summers so the grapes ripen at the end of August and the harvest of the different varieties proceeds until the end of September.
In this period, there is a particular energy in the air, that energy that requires the harvest, enthusiasm and curiosity for the new vintage in the cellar, the aromas of the fermenting must, new treasures to be discovered.
The Friuli Vineyards, From the Alps to the sandy beaches, from the lagoon to the Carso cliffs and in the middle of the hills. Few regions in the world can boast such variability and diversity in such a small area and even less if we talk about plant species.
In Friuli are 3388 the plant species, 
more than in the entire Germany
 and most of the half of how many are present in the rest of Italy (about 6000).
The area in which our vineyards grow is the hilly area of ​​the DOC Friuli Colli Orientali .
Friuli is a small compendium of the universe, flat and lagoon alpine in sixty miles from the north to midday

Salis Terrae is us. Leonardo and Matteo, who have always been lovers of wine, land and territory; we get from the earth what is precious to us, the fruit of our work, the fruit of the vines, the salt of life. It is the gem in which we have been able to enclose our experiences together, in which we have combined our intentions and our values, our love for the land and for the territory.

Sauvignon Blanc – DOC – 2017

Sauvignon Blanc Friuli Colli Orientali DOC produced from vines on land composed of marl. Salis Terrae is located in the heart of the territory of the greatest Italian and world whites, the hilly area which is part of the DOC Colli Orientali and Isonzo areas.

PLACE OF PRODUCTION: Friuli Venezia Giulia
SOIL: Calcareous Marl
VARIETAL: Sauvignon Blanc 100%
COLOR: Straw yellow with green reflections
TASTING & PAIRING: Bouquet is delicate and aromatic with hints of citrus, aromatic herbs such as sage and mint, vegetables such as tomato leaves and peppers. Taste is structured, intense, voluminous, pleasantly fresh and sour. The aftertaste is characteristic, full of complex and intense sensations, incredibly persistent.
An aperitif wine that goes well with fish appetizers, both cooked and raw, first fish dishes, boiled fish, vegetable soups, creams and velvety, medium-aged cheeses

Pinot Grigio – DOC – 2017

Pinot Grigio Friuli Colli Orientali DOC produced from vines on land composed of marl. Salis Terrae is located in the heart of the territory of the greatest Italian and world whites, the hilly area which is part of the DOC Colli Orientali and Isonzo areas

PLACE OF PRODUCTION: Friuli Venezia Giulia
SOIL: Calcareous Marl
VARIETAL: Pinot Grigio 100%
COLOR: Intense yellow with light coppery reflections
TASTING & PAIRING: Bouquet is intense and complex with floral and ripe fruit notes reminiscent of pear and apricot. On the palate it is elegant, well structured and sapid, persistent with a well balanced acidity. Particularly suitable for fish dishes, mollusc appetizers, risottos and vegetable soups, light soups and white meats
ALCOHOL CONTENT: 13.0%

Prosecco – DOC – Extra Dry

Prosecco (Glera 100%) Friuli Colli Orientali DOC produced from vines on land composed of clay and minerals. Salis Terrae is located in the heart of the territory of the greatest Italian and world whites, the hilly area which is part of the DOC Colli Orientali and Isonzo areas

PLACE OF PRODUCTION: Friuli Venezia Giulia (typically approx. 400m above sea level)
VARIETAL: Glera 100% (Glera is a white variety of grape of Slovenian origin, which was brought to the village of Prosecco from Slovenia’s Karst region. Glera was, until 2009, mostly referred to as Prosecco)
SOIL:
Clay Land, flooded with presence of minerals
HARVEST Harvest age middle of September.
Mechanical collection mode
FERMENTATION: Wine-pressing suffuse, enzyme decanting cleaning the must and fermenting with selected cream yeasts, stainless steel, temperature controlled to avoid fermentation (lactic scan). Secondary fermentation with a mixture of yeast and sugar and seals the wine in a stainless steel tank to trap the CO2 inside (which makes the bubbles). How long the CO2 is trapped in the wine dictates how bubbly the final product will be – frizzante (slightly bubbly) is left for 20 days to three months. Once second fermentation is complete, the wine is filtered and fined to remove the lees and sediment. Another mixture of sugar and wine is added to preserve the bubbles (charmat method).
TOTAL ACIDITY: 6 g/l
SUGAR RESIDUE: 14 g/l
COLOR: Straw yellow with green reflections
TASTING & PAIRING: Bouquet is rich in floral scents and fresh fruit, soft, dry, pleasantly acidic on the palate.
An aperitif wine that goes well with fish appetizers, both cooked and raw, first fish dishes.
ALCOHOL CONTENT: 11.0%
SERVING TEMPERATURE: 6° – 8°C (42 – 46°F)
